Acclaimed chef Guillaume Brahimi opens Bistro Guillaume in Sydney.

Audi ambassador, Guillaume Brahimi has opened a new restaurant in Sydney, bringing the award-winning Bistro Guillaume to the harbour city.

One of Australia’s favourite and most celebrated chefs, Guillaume Brahimi has broadened his base in Sydney with the opening of Bistro Guillaume Sydney. The new bistro marks the French-born chef’s third Sydney venue, joining the acclaimed Guillaume in Paddington and The Four in Hand By Guillaume dining room. It is also Guillaume’s third bistro venue nationally, with other Bistro Guillaumes in Melbourne and Perth.

The 130-seat restaurant, located in the Sydney CBD in 259 George Street’s Suncorp Building, features a glamorous interior designed by Blainey North – her first restaurant interior – featuring a sophisticated, modern take on the bistros of the Belle Epoque era with brass features, wood panelling, timber flooring and banquettes and high backed chairs in blue leather, as well as custom designed smart chandelier lighting.

Bistro Guillaume Sydney serves breakfast, lunch and dinner, features a casual 20-seat bar area serving light lunches during the day and drinks at night, and Brahimi’s first ever patisserie, with house baked French viennoiserie and Iggy’s breads for eat-in and takeaway.

"I have been dreaming of opening one of my Bistros in Sydney for years, and it has finally happened! I have been waiting for the right site to be able to create a bistro that has all of my favourite qualities of a classic Parisian dining room. I think what we have created is unique in this city – it's an elegant room, but still a fun, classic bistro from the bar to the patisserie. I hope people will want to pop in for a croissant and coffee in the morning, a classic tartine or cheese souffle for lunch, and then a perfect steak frites with a great bottle of wine at night. It's a comfortable bistro for everyone, at any time”.

The restaurant menu will feature French bistro classics including some of the dishes Brahimi’s Bistros have become known for in Melbourne and Perth, like classic onion soup, twice baked cheese soufflé with Roquefort sauce, roasted Barossa chicken with tarragon and Paris mash, and steak frites with béarnaise. Brahimi and head chef Jeremy Pace have also added some new dishes that have not appeared on the Bistro menus before such as lamb pithivier, and whiting Colbert with Pomme Pont Neuf.

Bistro Guillaume Sydney is located at 259 George Street in the Suncorp Building.
